Edible Zucchini Bowl Dinner

 

  • 1 eight ball zucchini person.
  • 2 farm raised eggs per person
  • marinara sauce
  • Parmesan and mozzarella cheese
  • Olive oil
  • Salt

1.  Cut the top off the zucchini and scoop out the seeds.
2.  Coat the inside of the zucchini with olive oil and sprinkle with salt.  Roast at 425  degrees for 20 minutes
3.  Spoon a bit of marinara sauce into the bottom of the zucchini.  Crack two egg inside.  Top with another spoonful of marinara and sprinkle with cheese.
4. Roast until cheese is bubbly
5.  Enjoy

 

Stuffed Zucchini Bowl

  • 1 lb ground beef
  • 1 cup salsa
  • 1 TBSP each of cumin and chili powder
  • Olive oil
  • Cheddar cheese
  1.  Cut the stem off the zucchini and scoop out seeds.
  2. Coat the inside with olive oil and roast at 425 degrees for 20 minutes
  3. While roasting zucchini, prepare the stuffing by cooking the ground beef with the salsa and spices.  Good until meat is brown.
  4. Scoop the meat into the zucchini bowl and top with cheese.
  5. Roast until cheese is bubbly
