Simple Broccoli, Potato, Chicken Soup

2 TBSP Butter

 

1 onion chopped

 

2 cloves of garlic (or 1 TBSP garlic powder)

 

 1 ¾ fresh broccoli chopped

 

1 ½ lbs white potatoes cubed

 

3 cups chicken broth

 

1 cup diced chicken

 

3 cups water

 

¼ teas black pepper

 

1 ¾ teas sea salt

 

Your favorite cheese grated for topping

 

  • In a large pot, melt the butter over moderately low heat. Add the onion; cook, stirring occasionally, until translucent, about 5 minutes.

  • Add the garlic, broccoli stems, potatoes, broth, water, salt, and pepper. Bring to a boil. Reduce the heat and simmer until the vegetables are almost tender, about 10 minutes.

  • Dish into bowls and top with cheese.
