There is NOTHING like the taste of a fresh, homegrown tomato.
Pair that with cucumbers and you have the taste of summer right at your dinner table
- 2 large sliced cucumber
- 3 diced tomatoes
- 1 TBSP olive oil
- 1/4 cup vinegar of your choice (apple cider, red wine, balsamic)
- salt to taste
- Option: add your favorite chopped herbs to “spice” things up
Add everything to a large bowl and toss together. Place in fridge to marinate and cool (it can be eaten right way if desired).
