3 lbs of fresh okra ( I know this sounds like a lot, but when it cooks down it isn’t so much)

6-8 TBSP of olive or avocado oil

2 tsp salt

1 tsp pepper

Preheat over to 400 degree. You can also use the air fryer and preheat to 400 degrees.

Slice the stem end of the okra off and cut the okra pod in half lengthwise.

Put all the okra into a Ziploc baggie and add the the oil, salt, and pepper. Shake until it is all coated.

Spread the okra on a single layer on a cookie sheet. You may need to use more than on cookie sheet. Place in oven.

Cook 10 minutes and then use a spatula to loosen and flip the okra. Do this every 10 minutes for about 45 minutes OR until the okra is golden brown and crispy.
Yummy variations:

Sprinkle with red pepper flakes for zing.

Sprinkle with parmesan cheese
