Low-Carb, Gluten-Free “Oatmeal”
Something that I have been missing on chilly mornings is oatmeal, but since I have taken grains out of my diet, that hasn’t been an option. So as with so many of my favorites, I have had to modify my recipes. This one is even better than regular oatmeal. At least I think so.
- 1 tbsp flax
- 1 tbsp hemp seed
- 1 tbsp chia seed
- 1 egg
- 2 tbsp collagen
- ½ cup milk of your choice
- Cinnamon to taste
- ½ tsp vanilla
- Sweetener to taste (I use stevia)
- Mix milk and seeds together. Microwave 1 minute and mix. The seeds gel to give it a more “oatmeal” consistency.
- Add the egg and mix well. Microwave in 30-second intervals until you reach the consistency that you like your oatmeal. If you go too long, the egg will scramble, so keep an eye it. You can also use the stove top.
- Add collagen, cinnamon, vanilla, and sweetener. Mix well
Add ins: blueberries, strawberries, peanut butter/nut butter, apples, raisins, etc
Enjoy with a hot cup of coffee!
