One of the things I love doing is cooking for those I love. Cooking a healthy meal is really one way that I show my love for others. I love taking a recipe and modifying it and making it even more delicious and nutritious. Sometimes I have epic fails and sometime I have wonderful successes.
I want to be able to share those successes with you and give you nutritious and delicious recipes to add to your repertoire.
The recipes that I come up with and/or modify must meet some criteria.
- They are all made from whole foods. Nothing is man-made, processed, or comes from a box.
- They must be simple and nutritious. I don’t have time to mess around for hours in the kitchen, and quite frankly I don’t have the patience. I am always on the hunt for recipes that require as little ingredients as possible but still taste amazing.
- The ingredients must be affordable. As a single mom on a budget I get that we can’t all be purist. I strive to find the most affordable and nutritious ingredients possible. I want the most bang for my buck.
- MUST BE DELICIOUS. The recipes I share with you have been kid tested as well. I want your whole family to enjoy them.
My kids LOVE doughnuts but I refuse to buy them from the deli or supermarket. A couple of Christmases ago I bought a baby cakes doughnut maker for them for Christmas. This was a huge hit and we often spend a Saturday morning creating yummy donuts. Of course they have to meet the above criteria with being delicious the most important. There are always leftovers that make a great snack or breakfast the following morning.
Coconut Flour Donuts
This recipe is modified from Pragmatic Paleo
¼ cup of coconut flour
1/8 teaspoon sea salt
1/8 teaspoon baking soda
3 eggs separated
½ tsp cream of tarter
¼ cup palm sugar
½ tbsp vanilla
¼ cup butter melted
- Plug in your doughnut maker. You can also use a doughnut pan. Preheat the oven to 350 degrees (I have not tried it this way).
- Blend all dry ingredients together in a bowl.
- Separate the yolks from the whites.
- Whip the whites with the cream of tartar until picks form.
- Blend the wet ingredients in a bowl.
- Add the wet ingredients to the dry and blend until well blended
- Fold in the egg whites until blended.
- Spoon into the doughnut maker or spoon into doughnut circles on the pan (about 2/3 the way full). Bake for 20 minutes in the oven OR until the light on the doughnut maker signals it is done.
Sprinkles- sprinkle on top right before you put in the oven or doughnut maker.
Cinnamon and sugar-after the doughnuts are done rub the top with butter and dip in cinnamon and sugar.
