Coconut Flour Donuts

One of the things I love doing is cooking for those I love.  Cooking a healthy meal is really one way that I show my love for others.  I love taking a recipe and modifying it and making it even more delicious and nutritious.   Sometimes I have epic fails and sometime I have wonderful successes.

I want to be able to share those successes with you and give you nutritious and delicious recipes to add to your repertoire.

The recipes that I come up with and/or modify must meet some criteria.

  1.  They are all made from whole foods.  Nothing is man-made, processed, or comes from a box.
  2. They must be simple and nutritious.  I don’t have time to mess around for hours in the kitchen, and quite frankly I don’t have the patience.  I am always on the hunt for recipes that require as little ingredients as possible but still taste amazing.
  3. The ingredients must be affordable.  As a single mom on a budget I get that we can’t all be purist.  I strive to find the most affordable and nutritious ingredients possible.  I want the most bang for my buck.
  4. MUST BE DELICIOUS.   The recipes I share with you have been kid tested as well.  I want your whole family to enjoy them.

My kids LOVE doughnuts but I refuse to buy them from the deli or supermarket.   A couple of Christmases ago I bought a baby cakes doughnut maker for them for Christmas.  This was a huge hit and we often spend a Saturday morning creating yummy donuts.  Of course they have to meet the above criteria with being delicious the most important.  There are always leftovers that make a great snack or breakfast the following morning.

Coconut Flour Donuts

This recipe is modified from Pragmatic Paleo
¼ cup of coconut flour
1/8 teaspoon sea salt
1/8 teaspoon baking soda
3 eggs separated
½ tsp cream of tarter
¼ cup palm sugar
½ tbsp vanilla
¼ cup butter melted

  1. Plug in your doughnut maker.  You can also use a doughnut pan.  Preheat the oven to 350 degrees (I have not tried it this way).
  2. Blend all dry ingredients together in a bowl.
  3. Separate the yolks from the whites.
  4. Whip the whites with the cream of tartar until picks form.
  5. Blend the wet ingredients in a bowl.
  6. Add the wet ingredients to the dry and blend until well blended
  7. Fold in the egg whites until blended.
  8. Spoon into the doughnut maker or spoon into doughnut circles on the pan (about 2/3 the way full).  Bake for 20 minutes in the oven OR until the light on the doughnut maker signals it is done.
Variations
Sprinkles- sprinkle on top right before you put in the oven or doughnut maker.
Cinnamon and sugar-after the doughnuts are done rub the top with butter and dip in cinnamon and sugar.
Chocolate Doughnuts:  Add to the batter ½ tsp unsweetened cocoa powder, ¼ tsp cinnamon
